Caramel Squares (Millionaires shortbread) (No condensed milk)

Hello everybody,

Welcome back to my blog. Today I'm showing you guys how to make caramel squares (Millionaires Shortbread as they call it in America) with no condensed milk. So lets get to the recipe.


Ingredients:

For the shortbread:

100g of butter,

100g of caster sugar,

125g of plain flour.

Do not: DO NOT USE SELF RAISING FLOUR OR DO NOT PUT BAKING POWDER IN. This will cause the shortbread to rise which you do not want.

For the caramel:

75g of butter,

45g of soft brown light sugar,

45g of caster sugar.

For the chocolate topping:

150g of milk chocolate (melted).


Tip: Have the oven preheated before you start the shortbread. You do not need it for any other steps.


Method:

For the shortbread:

  1. Beat the butter and sugar together until a light pale colour.

  2. Then add the flour and mix. It should be very dry.

  3. Line a squared tin with baking parchment and add the shortbread mix. Press the dough all over the bottom of the tin.

  4. Place in the oven to cook for about 30mins.

  5. Then let cool.

For the caramel:

  1. In a saucepan put the butter and sugar and put on low heat stirring constantly until all the butter is melted.

  2. Take off the heat and stir until combined.

  3. Let cool a little and pour over the cooled shortbread.

  4. Place in the fridge for about 45mins to set a little before adding the chocolate on top.

For the chocolate layer:

  1. Once you've melted the chocolate take the shortbread and caramel thing out of the fridge and pour the melted chocolate over the caramel layer. Then place in the fridge to let set.
