Coffee and walnut buns

Hi everybody, welcome back to my blog. In today's blog post i'm showing you how to make coffee and walnut buns. So let's get into this recipe.


Ingredients:

30 ml of coffee (cold),

2 tsp instant coffee,

150 g of unsalted butter,

100g of caster sugar,

100g of of soft brown light sugar,

2 eggs,

200g of plain flour,

1 tsp of baking powder,

50 g of chopped walnuts.

For the icing:

100g of unsalted butter,

100g of icing sugar,

10 ml of coffee,

Chopped walnuts to decorate.


Method:

  1. Cream the butter and sugar until well combined. Then add instant coffee.

  2. Add the eggs and coffee to the mixture.

  3. Add the flour and baking powder.

  4. Add the chopped walnuts.

  5. Mix until well combined.

  6. Bake at 180 degrees C for for 25 minutes and set to the side to let cool.

Meanwhile make the icing:

  1. Beat the butter for few minutes until pale and creamy.

  2. Add the coffee and and keep beating.

  3. Then add the icing sugar and beat for another minutes until the you get an icing consistency.

  4. Put on the buns and decorate with chopped walnuts.
