Updated: Jul 8, 2021
Hey,
So 2 days ago it was my Dads birthday, and I made him this cake and everyone loved it.
It was so delicious!
So today I'll show you how you can make it for someone's birthday.
Ingredients:
For the sponge:
190g of unsalted butter,
190g of soft brown light sugar,
5tsp of instant coffee,
250g of plain flour,
3tsp of baking powder,
4 eggs.
For the coffee buttercream:
100g of butter,
125g of icing sugar,
2tbsp of water,
2tsp of instant coffee.
To decorate:
20g of dark chocolate,
5g of cocoa powder.
Method:
Preheat the oven to 180 Deg C.
Cream the butter and sugar together for a few minutes.
Add the flour, eggs and instant coffee and mix for about 3 mins.
Greese and then line 2 sandwich tins with parchment paper.
Pour half of of the batter in each of the tins and place in oven for about 20 mins or until lightly golden brown and completely cooked.
Then let cool.
Next make the buttercream. Cream the butter until completely soft then add the sugar, water and instant coffee. Beat for about 2 mins.
Spread half of the icing in between each of the layers.
Sift cocoa powder on top and break pieces of dark chocolate and place in patterns on top of the cake.
Enjoy
