How to make Jam Drops

Hi guys so today I will be sharing a recipe from a cooking camp I did at East Cork Cooking School.

And of course credit to Claire my teacher at the camp who created this recipe. She has her own blog on Facebook @ East Cork Cookery School so check it out.


How to make Jam drops

Makes about 24

Cooking times: 20-25 mins

Oven Temperature:220 Deg C


Ingredients:

80g unsalted butter, 80g brown or caster sugar, 2 tablespoons of milk, 1/2 tablespoon vanilla extract, 125g (1 cup) self raising flour, 40g (1/3 cup) custard powder, 100g of Jam for the top.

Method: 1. Preheat the oven to 220 Deg C. 2. Cream together the butter and sugar until well combined add the milk and vanilla while it mixes. 3. In a large bowl measure out the flour and the custard powder add to your butter mixture and mix till combined. 4. Line 2 baking trays with baking paper. 5. Using your hands roll a little ball with the dough and place on the baking paper. Repeat this step with the remaining dough. 6. Place your thumb on each ball individualy and press down to make a little well. 7. Place a little Jam in your well. 8. Bake in the oven for 20-25 minutes or until lightly crispy all around. 9. Place on a wire rack to cool. 10. Enjoy!!
