Peppermint and Chocolate Cupcakes (Alice Cakes) - Serves 12

Hi,

So yesterday my cat Alice and my other cat Vegas had their Birthdays (they got lots of treats).

Alice turned 1 in human years and Vegas turned 12. Pictures of them down below.

I tried to do a paw on the bun with the icing, because these were their birthday cupcakes.

Lets get to the recipe.

P.S. These are kinda heavy so I recommend you only have 1.


DO NOT GIVE THESE TO ANY OF YOUR PETS!


100g of butter. I used a spreadable butter (butter with rapeseed oil).

100g of soft brown sugar

20g of cocoa powder

4 drops of peppermint essence (add less if you don't want a strong taste)

170g of plain flour

2 tsps of baking powder

2 eggs



Icing


120g of icing sugar

20g of butter

3 tbps of water

I used yellow food colour

3 drops of peppermint essence (less if you don't like a very strong taste)


Method:

  1. Preheat your oven to 180deg C.

  2. Cream the butter and sugar until you have a light pale colour.

  3. Add your egg and peppermint essence.

  4. Then add your cocoa powder, flour and baking powder.

  5. Place in the oven for about 25 mins or until when you touch the bun it bounces back up.

  6. Put all you Icing ingredients in a bowl and whisk constantly until you have a royal icing consistency.

  7. Pipe on or place icing on top of your bun and your ready to eat.
